"Really good with a delicious lemon sauce. I served this with my Roasted Brown Butter Carrots and Cauliflower. Prep time does not include 2-3 hour marinating time, if chosen."

Step by Step Method
Step 1
Preheat oven to 350°F. **See Note
Step 2
Spray the baking dish with non-stick cooking spray.
Step 3
Place chicken breasts in the dish. Season with salt and pepper.
Step 4
Mix the rest of the ingredients together, EXCEPT HONEY, with a wire whisk and pour over the chicken. **See Note. Cover with foil.
Step 5
Before placing it in the preheated oven, pour off most of the marinade just till it comes up halfway on the chicken pieces in the dish. Discard the rest.
Step 6
Place in a preheated 350°F oven and bake for 60 minutes. Then remove the foil, drizzle honey over the chicken, and bake uncovered for an additional 30 minutes.
Step 7
*NOTE* If you want a richer flavor, place raw chicken that's been treated with the sauce, in the fridge for a couple hours before baking. Let set on the counter for 1/2 hour before putting it in the oven to warm up a bit first. Preheat oven to 350°F while the chicken is coming to room temp.
