Ingredients

The ingredients are:
  • 2 large chicken breast halves, boneless, skinless, cut in half lengthwise
  • Pinch each of salt and pepper
  • 1/2 cup plain Greek yogurt
  • 1/2 cup lemon curd
  • 1/2 cup low-sodium chicken stock
  • Zest of 1 lemon, about 1 tablespoon
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon Mrs. Dash Onion & Herb seasoning
  • Pinch of dried crushed red pepper flakes
  • 1/4 teaspoon lemon pepper
  • 2 tablespoons honey

How to Make

  • Step 1: Preheat oven to 350°F. **See Note

  • Step 2: Spray the baking dish with non-stick cooking spray.

  • Step 3: Place chicken breasts in the dish. Season with salt and pepper.

  • Step 4: Mix the rest of the ingredients together, EXCEPT HONEY, with a wire whisk and pour over the chicken. **See Note. Cover with foil.

  • Step 5: Before placing it in the preheated oven, pour off most of the marinade just till it comes up halfway on the chicken pieces in the dish. Discard the rest.

  • Step 6: Place in a preheated 350°F oven and bake for 60 minutes. Then remove the foil, drizzle honey over the chicken, and bake uncovered for an additional 30 minutes.

  • Step 7: *NOTE* If you want a richer flavor, place raw chicken that's been treated with the sauce, in the fridge for a couple hours before baking. Let set on the counter for 1/2 hour before putting it in the oven to warm up a bit first. Preheat oven to 350°F while the chicken is coming to room temp.
