Step by Step Method
Step 1
To make the cucumber salads: in a bowl combine the lemon juice, 2 tablespoons oil, jalapeño and the oregano. Stir in the cucumber, onion, olives and half of the mint; toss.
Step 2
In a small bowl combine the yogurt and half of the garlic. Chop up the rest of the mint (1/4 cup) and stir into the yogurt mixture; season with salt and pepper.
Step 3
In a bowl combine the ground lamb, the rest of the garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. In a skillet on medium heat heat 1 tablespoon oil and then add the ground meat mixture in half-cup spoonfuls (meatballs); cook for 2 minutes and then press the mounds into patties and cook for 3-5 minutes or until done; turning once.
Step 4
Serve the lamb patties on flat breads (or pita breads) with cucumber salad and the yogurt mixture.
