Ingredients

The ingredients are:
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • 1 jalapeno pepper, seeded and sliced
  • 1 1/2 teaspoons oregano, dried, crushed
  • 1 cucumber, peeled, seeded and chopped
  • 1 cup red onion, sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup mint leaves
  • 1/2 cup yogurt, plain
  • 1 garlic clove, minced
  • Kosher salt
  • Pepper
  • 1 pound lamb, ground
  • 4 flatbreads, warmed

How to Make

  • Step 1: To make the cucumber salads: in a bowl combine the lemon juice, 2 tablespoons oil, jalapeño and the oregano. Stir in the cucumber, onion, olives and half of the mint; toss.

  • Step 2: In a small bowl combine the yogurt and half of the garlic. Chop up the rest of the mint (1/4 cup) and stir into the yogurt mixture; season with salt and pepper.

  • Step 3: In a bowl combine the ground lamb, the rest of the garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. In a skillet on medium heat heat 1 tablespoon oil and then add the ground meat mixture in half-cup spoonfuls (meatballs); cook for 2 minutes and then press the mounds into patties and cook for 3-5 minutes or until done; turning once.

  • Step 4: Serve the lamb patties on flat breads (or pita breads) with cucumber salad and the yogurt mixture.
