Step by Step Method

Step 1

Brown meat with chopped onions and chopped bell peppers. Add spices.

Step 2

Place chunked zucchini and corn in bottom of greased 2 1/2 quart casserole (I think you could use frozen corn here). Add browned lamb mixture.

Step 3

Top with chunked tomatoes and juice. Cover.

Step 4

Bake at 350 degrees for 1 1/2 hours. Stirring occasionally.

Step 5

Top with cheese last 5 minutes at serving time.

Step 6

You can cut baking time by precooking zuccini and corn before adding to casserole.

Step 7

Bake at 375 for 30 minutes.if you do this.

Awesome lamb casserole! I did take a couple of liberties with this recipe, due to what I had on hand. Used diced carrots for the corn and a 28oz of diced tomatoes and thickened it a wee bit. And used mozzarella for the parmesan. Thank you for sharing this keeper Dienia! :-)

Stupendous! Bright, vibrant, delicious casserole. Easy as pie to put together too. I was wary of the long cooking time but it worked. I left it uncovered for 20 minutes at the end. Served with Tzatziki sauce on the side.
