"Presented here in this recipe is a quick and tasty grilled-cheese-type of sandwich that is filled with a carrot-scallion type of omelet, cheese, and ham, etc.. It's not only good to serve for breakfast but satisfying enough for lunch or a light dinner item. During the morning commute in Korea, you can find plenty of people queuing up to buy street toasts and coffee or cold drinks at the many toast shops that have popped up over the last ten years. They are fast, cheap, delicious and nutritious. What else would you want for breakfast? Source: Gilded Gingerbread"

Step by Step Method

Step 1

Place the eggs in a bowl and add the salt and pepper. Whisk until mixed well.

Step 2

Add the scallions, carrots, and cabbage to the egg mixture. Mix well.

Step 3

Heat a frying pan over low heat, spread butter around the pan and when melted and hot, pour in the egg and vegetable mixture. Try to shape the egg/veg mixture into a rectangle. It gets easier as the eggs cook.

Step 4

When the omelet is cooked on one side, cut it in half and flip each one carefully. When they are cooked, remove them to a plate.

Step 5

Wipe the frying pan with some kitchen towel, add a little more butter and toast the bread. When one side is done, flip them over and start to toast the other side.

Step 6

Add the cheese to two slices of the bread. Lay the omelet and ham on top of the cheese and spread on some ketchup while the bottom side of the bread is toasting. Work quickly so you don’t burn the underneath.

Step 7

When the bread is toasted on the bottom, put the other slice of toast on top of the ketchup to make a sandwich. Repeat with the remaining slice.

Step 8

Your toast is now ready to go! Enjoy it with a glass of milk or a cup of coffee. It is perfect for a lazy weekend breakfast.

This is a great breakfast sandwich. The veggies added just the right amount of crunch and the kethup added a hint of pleasant sweetness. One sandwich is super filling. I might cut the egg in half next time, but there will be a next time. DH just loved it. Made for CQ19.

Amazing!!!! This is going straight into my Best of 2019 file. I've never cooked breakfast like this before but it will be the first of many. It was fun to make and so delicious!! I can see why it's so popular in Korea. Thank you!
