Ingredients

The ingredients are:
  • 4 large eggs
  • Sea salt, to taste
  • Freshly grated black pepper, to taste
  • 1 scallion, finely chopped
  • 1/4 cup carrots, finely chopped
  • 1/2 cup cabbage, finely chopped
  • 2-4 tablespoons butter
  • 1/4 pound sliced bread (4 slices)
  • 1/2 cup cheddar cheese, grated
  • 1/8 pound ham (4 slices)
  • Ketchup, to taste

How to Make

  • Step 1: Place the eggs in a bowl and add the salt and pepper. Whisk until mixed well.

  • Step 2: Add the scallions, carrots, and cabbage to the egg mixture. Mix well.

  • Step 3: Heat a frying pan over low heat, spread butter around the pan and when melted and hot, pour in the egg and vegetable mixture. Try to shape the egg/veg mixture into a rectangle. It gets easier as the eggs cook.

  • Step 4: When the omelet is cooked on one side, cut it in half and flip each one carefully. When they are cooked, remove them to a plate.

  • Step 5: Wipe the frying pan with some kitchen towel, add a little more butter and toast the bread. When one side is done, flip them over and start to toast the other side.

  • Step 6: Add the cheese to two slices of the bread. Lay the omelet and ham on top of the cheese and spread on some ketchup while the bottom side of the bread is toasting. Work quickly so you don’t burn the underneath.

  • Step 7: When the bread is toasted on the bottom, put the other slice of toast on top of the ketchup to make a sandwich. Repeat with the remaining slice.

  • Step 8: Your toast is now ready to go! Enjoy it with a glass of milk or a cup of coffee. It is perfect for a lazy weekend breakfast.
