" Now you can make authentic chow mein at home with great results and this is just as good if not even better than any Chinese take-out, you may need to adjust the soy sauce to suit your taste, I most always add some crushed chili flakes in for heat, plan slightly ahead the pork slices needs to marinate for at least 30 minutes or more… This will also work with beef or chicken strips, and fresh sauteed mushrooms may be used in place of the canned "

Step by Step Method

Step 1

Slice meat into thin strips.

Step 2

In a small bowl whisk 2 tablespoons cornstarch with sugar then mix in 1 tablespoon soy sauce and 2 tablespoons of oil; mix to blend.

Step 3

Pour the soy sauce mixture over the pork strips; toss well to coat then allow to sit for 30-45 minutes at room temperature tossing once or twice to coat the meat evenly.

Step 4

In a wok or large saute pan heat 2 tablespoons shortening; brown the meat lightly on all sides in hot shortening.

Step 5

After browning the pork you may add in chopped garlic and saute for 2 minutes.

Step 6

Add remaining 4 tablespoons soy sauce and 1-1/2 cups water; cover and simmer on low heat for 45 minutes.

Step 7

Add in the celery and onions; simmer for 15 minutes more.

Step 8

In a small bowl, blend in remaining cornstarch with 1/4 cup cold water; stir into meat mixture.

Step 9

Add molasses, water chestnuts, bean sprouts and mushrooms; heat thoroughly.

Step 10

Season with salt and pepper, then garnish with chopped green onions and toasted almonds.

I've never had much success with Chinese recipes --until now! Excellent flavor, tasted fresh and healthy, disappeared quickly. I'll definitely make this again and take a picture before serving next time :-) I did use fresh bean sprouts and mushrooms rather than canned, and added a pinch of ginger spice blend (in a tube) into the liquid for simmering. Thanks Kittencal!
