Step by Step Method
Step 1
Marinate buffalo in half the chilies (I'm guessing overnight).
Step 2
Put the spinach in a pan with the rest of chilies, peanut butter, sage leaves and buffalo fat (can use lard). I would add spinach towards end so it doesn't overcook, then put the buffalo in and cook until the meat is well browned.
