  • When selecting jalapeño peppers, choose ones with bright green skin and no signs of wilting.
  • When grating the cheese, use a medium-grated cheese for the best texture.

  • Replace cheddar cheese with feta cheese - This substitution will provide a more salty and tangy flavour to the muffins, as feta cheese has a stronger taste than cheddar.
  • Replace jalapeno peppers with bell peppers - This substitution will provide a milder flavour to the muffins, as bell peppers are much less spicy than jalapeno peppers.

Spinach and Feta Muffins Replace the jalapeno peppers with 1 cup of finely chopped spinach, and replace the cheddar cheese with feta cheese. Bake as directed.

Tomato and Mozzarella Muffins Replace the jalapeno peppers with 1 cup of finely chopped tomatoes, and replace the cheddar cheese with mozzarella cheese. Bake as directed.

Slow Cooker Chili: A hearty and flavorful chili made with ground beef, beans, tomatoes, and spices. This slow cooker chili pairs perfectly with the savory jalapeño cheese muffins, making it the perfect accompaniment for a cozy evening meal.

Cornbread: A classic side dish that pairs perfectly with slow cooker chili. This buttery and slightly sweet cornbread is the perfect way to round out a cozy meal. Plus, it's easy to make and can be served warm or cold.
