Step 1

Preheat oven to 350 degrees Fahrenheit

Step 2

Grease and pam spray a 10-inch pie plate.

Step 3

Combine the milk, sugar, baking mix, butter, eggs, vanilla,lemon extract ,lemon zest and lemon juice in a blender.

Step 4

Cover and process on high speed for 15 seconds until smooth.

Step 5

Pour the lemon filling into the prepared pie plate.

Step 6

Place in the oven and bake at 350 degrees F for 50 minutes or until set in the middle and a knife inserted in the center comes out clean.

We haven't found an Impossible pie that we didn't like...and this one didn't disappointment us...it did deflate once it cooled down...the flavor of lemon is there...but it's not overwhelming...the texture is like a custard...we really did enjoy it...made for "FYC" tag game...
