"This is a fun twist to comfort food for me. I love meatballs and this is a fun take on them. The meatballs have a great flavor profile and are delicious served over rice noodles. Notes: -You can use rice noodles (the type used for Pad Thai, etc... ) OR you can use vermicelli noodles. -As written, this is served with a cold noodle and lettuce salad. If you prefer, keep the noodles warm and serve the lettuce salad on the side! Experiment and find your favorite combination. Enjoy!"
