Preheat oven to 425 degrees F.

Step 2

Spray baking sheet with nonstick cooking spray.

Step 3

Combine flour, sugar, baking powder, and salt in a mixing bowl.

Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs.

Step 6

Add to dry ingredients, mixing until just blended.

Stir in hazelnuts.

Step 11

Bake at 425 degrees F. for 10-12 minutes or until light golden.

Editorial Notes

The ingredient tips, suggestions, variations, facts, questions and answers below are not edits to the original author's recipe. They are not meant to imply any change would improve the recipe. • For best results, use cold butter or margarine when cutting into the dry ingredients.
  • If you don't have hazelnuts, you can substitute with your favorite nut such as walnuts or pecans.

  • For the butter, use coconut oil instead. Coconut oil is a healthier alternative to butter and it has a milder flavor that won't overpower the hazelnuts and coffee.
  • For the eggs, use mashed banana instead. Banana is a great vegan alternative to eggs and it can help make the scones more moist and fluffy.

Chocolate Chip Scones Replace the hazelnuts with 1/2 cup of semi-sweet chocolate chips and omit the instant coffee from the ingredients and instructions.

Vanilla-Cinnamon French Toast - This classic French toast recipe with a hint of vanilla and cinnamon is the perfect accompaniment to the Hazelnut-Coffee Scones. The sweet and savory flavors of the French toast will complement the nutty and coffee flavors of the scones nicely.

Blueberry-Maple Syrup Pancakes: These pancakes are a great way to add a little sweetness to the meal. The blueberry and maple syrup combination will provide a delicious contrast to the savory French toast and nutty scones. The pancakes are easy to make and will provide a nice balance to the meal.

I used Macadamia nuts that I had on hand and these scones were delicious. I was extremely happy that they came out moist and they were a special treat for us for brunch!
