"These are fantastic served as appetizers, at a BBQ, ladies luncheon, baby shower; or, even for a light dinner. I love to grill these; but, a grill pan or even the broiler can be used. They don't take long, so make sure to use asparagus that is not too thick; otherwise, they just don't work very well. And, think ahead - the steak really needs to marinate at least 2-4 hours, to get a nice flavor and tenderize."

Step by Step Method
Step 1
Steak ... Personally, I like to use flank steak for this recipe; it is cheaper than sirloin, and, if prepared correctly, it is just as good - or in my opinion, better. Which ever cut you decide on, you need to freeze it until slightly firm. This will make the slicing very easy.
Step 2
Marinade ... As the steak is in the freezer, prepare your marinate. Add everything to a 13"x9" pan, and mix well using a whisk. You can also use a ziploc bag; but, I have found the flat dish works better.
Step 3
Steak Preparation ... Thin slice your steak; you want about 24 slices. If you have a bit more, don't worry - skewer, grill, and enjoy as a snack. A "Chefs Bite," as we call it - quality control.
Step 4
Add the steak slices between 2 sheets of plastic wrap or wax paper, and lightly pound to flatten. NOT too thin, you don't want it falling apart. Then, add all the steak to the marinade, and flip to make sure that the steak is covered on both sides. Cover with plastic wrap; and refrigerate 2-4 hours.
Step 5
Asparagus ... I don't like soft or "mushy" asparagus; however, I do like it tender. The steak only takes 5-7 minutes to cook; so, unless they are the real thin (pencil) asparagus, I microwave them for just 30 seconds, to give them a head start.
Step 6
Add the asparagus, single layer, to a plate, covered with plastic wrap; and cook approximately 30 seconds on high heat - you probably will need to do this in 2 batches. Set them to the side to cool. Drizzle or brush the asparagus, on both sides, with olive oil. I prefer to use my atomizer, just to get a light coating on the asparagus. The oil will help the asparagus brown during cooking.
Step 7
Steak Bundles... Remove the steak from the marinade, pat dry with a paper towel; and, transfer to a sheet pan lined with parchment or foil, and let them come to room temperature. Add 2 asparagus spears at one end of the steak, one in each direction. Then, wrap the steak in a spiral motion around the center of the asparagus, leaving about an inch or so on the end of each asparagus. Then, secure with a toothpick.
Step 8
Grill ... Season the steak with salt and pepper on all sides; and, grill 5-7 minutes turning a few times as they cook. As I said, this can be done on an outdoor grill, indoor grill pan; or, even under the broiler. I found that the grill seems to work the best.
Step 9
Serve ... and ENJOY! ... These are really delicious and are so versatile. As I said, I have honestly served these from lunch to dinner, and snacks and appetizers. They take a little bit of work - but definitely worth it. Serve on a large platter; and, make sure to garnish with sesame seeds and scallions.
Step 10
For dinner, these bundles are great served over rice.
