Step by Step Method

Step 1

Place all wonton filling ingredients in a bowl and mix well.

Step 2

Fill a small bowl with water.

Step 3

Working with one wonton wrapper at a time, place one heaped teaspoon of the wonton filling in the centre and dip your finger in the water and run it around the edges of the wrapper and then fold over to enclose the filling and form a rectangle.

Step 4

Dab one of the lower corners with water and fold over to the other lower corner and pinch to seal and repeat until all the filling is used. Makes 30-35 wontons.

Step 5

Place all black vinegar and tamari dressing ingredients in a bowl and mix well.

Step 6

Bring a big saucepan of water to the boil and cook wontons in batches until they float to the surface and then remove from water using a slotted spoon and divide among serving bowls.

Step 7

Drizzle with black vinegar and tamari dressing, and chilli oil and garnish with spring onions and serve immediately.

Step 8

TIP: Chinese black vinegar, chilli oil and tamari can be found at Asian specialty grocery stores and in the Asian section at some supermarkets.
