Gnocchi With Summer Vegetables

Cook gnocchi according to the package direction; drain and set aside.
Cook pancetta in olive oil until browned; remove from pan and set aside,
Add butter to pan and add onions; cook over medium heat until translucent,
Add garlic to pan and saute for an additional 2- 3 minutes.
Add carrots and green peppers and saute for 5 minutes longer,
Add remaining vegetables and seasoning; cover and continue to cook on low for 10-15 minutes or until tender.
Stir in cheese, cream and pancetta; stir until sauce is combined with the veggies.
Serve with additional parmesan sprinkled on top.
