Ingredients

The ingredients are:
  • Gnocchi (one 16 ounce package)
  • 2 ounces pancetta ham, chopped
  • 2 tablespoons butter
  • 2 tablespoons oil
  • 1 red pepper, sliced in strips
  • 1 green pepper, sliced in strips
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 1 small zucchini, sliced
  • 1 small summer squash, sliced
  • 1 pint grape tomatoes, cut in half
  • 3 cups spinach leaves (uncooked)
  • 1/2 cup parmesan cheese, plus more for passing
  • 1/3 cup heavy cream
  • Salt and pepper
  • Crushed red pepper (optional)

How to Make

  • Step 1: Cook gnocchi according to the package direction; drain and set aside.

  • Step 2: Cook pancetta in olive oil until browned; remove from pan and set aside,

  • Step 3: Add butter to pan and add onions; cook over medium heat until translucent,

  • Step 4: Add garlic to pan and saute for an additional 2- 3 minutes.

  • Step 5: Add carrots and green peppers and saute for 5 minutes longer,

  • Step 6: Add remaining vegetables and seasoning; cover and continue to cook on low for 10-15 minutes or until tender.

  • Step 7: Stir in cheese, cream and pancetta; stir until sauce is combined with the veggies.

  • Step 8: Serve with additional parmesan sprinkled on top.
