Step 1: Cook gnocchi according to the package direction; drain and set aside.
Step 2: Cook pancetta in olive oil until browned; remove from pan and set aside,
Step 3: Add butter to pan and add onions; cook over medium heat until translucent,
Step 4: Add garlic to pan and saute for an additional 2- 3 minutes.
Step 5: Add carrots and green peppers and saute for 5 minutes longer,
Step 6: Add remaining vegetables and seasoning; cover and continue to cook on low for 10-15 minutes or until tender.
Step 7: Stir in cheese, cream and pancetta; stir until sauce is combined with the veggies.
Step 8: Serve with additional parmesan sprinkled on top.
