Step by Step Method

Step 1

Make small slits all over in the roast then stuff whole or half garlic cloves into each slit. Rub the roast with olive oil (use as much olive oil as you like).

Step 2

In a small bowl combine the sage with salt, black pepper, garlic powder and cayenne; rub the roast all over with the spice mixture.

Step 3

Place the roast in a roasting pan, cover and refrigerate 24 hours.

Step 4

Preheat oven to 325 degrees F, then set oven rack to middle position.

Step 5

Roast for about 2 1/2 to 3 hours or until the internal temperature reaches 145 degrees F (the temperature will rise more after removing from the oven).

Step 6

For the glaze: while the roast is cooking in a small saucepan combine the sugar with cornstarch, vinegar, water and soy sauce; bring to a simmer over medium heat stirring occasionally.

Step 7

Cook until bubbly and thickened.

Step 8

Brush the roast with glaze at least four times during cooking.

Step 9

The last 30 minutes of cooking pour the remaining glaze over the roast, the allow the roast to sit for about 10 minutes before slicing.
