"This is a quick recipe to put together, especially if you have someone to help you in the kitchen. Even if not, it is really quick. It is hot where I live most of the time, so it's nice to keep the heat out of the kitchen!"
Combine the first 4 ingredients in a saucepan over medium heat; bring to a boil. Cook 10 minutes or until reduced to 1/4 cup, stirring frequently.
Combine coleslaw, oil, juice, sugar, ginger, chile, 1/4 teaspoon salt, and onions in a bowl; toss.
Heat a grill or grill pan over medium-high heat. Coat pan or grill with cooking spray.
Thread the beef evenly onto 8 (8 inch) skewers.
Arrange skewers on the pan; cook 2 minutes on each side or until desired degree of doneness. Brush soy sauce mixture over the skewers; sprinkle with the remaining 1/4 teaspoon salt.
Heat the rice according to the package directions. Serve the skewers over the rice with slaw.
