Step 1
Heat oil in a large saucepan, over medium heat. Add garlic slices and saute, stirring constantly, until golden and crisp. Transfer to paper towels, to drain.
Step 2
Pour out excess oil, then return pan to the stove.
Step 3
Add 2 tablespoons butter. Once melted, add garlic.
Step 4
Cook for 1 1/2 minutes, or until the garlic starts to turn light golden, so that the butter is well infused with garlic flavor.
Step 5
Add rice, and stir to coat in garlic butter.
Step 6
Add broth, and place lid on saucepan. Bring to simmer, then immediately turn heat down to med-low.
Step 7
Cook for 12 –15 minutes, or until liquid is all absorbed by the rice.
Step 8
Remove from stove but, leave lid on. Let the rice rest for 10 minutes.
Step 9
Fluff with a fork, and transfer into a serving bowl.
Step 10
Add remaining butter and scallions, and stir through the rice, or garnish on top.
Step 11
Salt and pepper, to taste
Step 12
Sprinkle with crispy garlic, and serve.
