Step 1: Heat oil in a large saucepan, over medium heat. Add garlic slices and saute, stirring constantly, until golden and crisp. Transfer to paper towels, to drain.
Step 2: Pour out excess oil, then return pan to the stove.
Step 3: Add 2 tablespoons butter. Once melted, add garlic.
Step 4: Cook for 1 1/2 minutes, or until the garlic starts to turn light golden, so that the butter is well infused with garlic flavor.
Step 5: Add rice, and stir to coat in garlic butter.
Step 6: Add broth, and place lid on saucepan. Bring to simmer, then immediately turn heat down to med-low.
Step 7: Cook for 12 –15 minutes, or until liquid is all absorbed by the rice.
Step 8: Remove from stove but, leave lid on. Let the rice rest for 10 minutes.
Step 9: Fluff with a fork, and transfer into a serving bowl.
Step 10: Add remaining butter and scallions, and stir through the rice, or garnish on top.
Step 11: Salt and pepper, to taste
Step 12: Sprinkle with crispy garlic, and serve.
