"The original recipe came from the Louie's Backyard cookbook, but I've halved it and tweaked it and made it sort-of my own. They get ALL the credit for the original, however. Make sure your plantains are almost black...the yellower they are, the less flavour they have."

Step by Step Method
Step 1
Combine flour, cinnamon, pepper and sugar in a zip-top plastic bag.
Step 2
Heat butter in a shallow skillet over medium heat until melted.
Step 3
Peel plantains, then slice into rounds 1/2-inch thick.
Step 4
Drop plantain slices a few at a time into the bag of flour and shake well to coat.
Step 5
Remove plantain slices from bag; shake off excess flour.
Step 6
Fry plantain slices for 4 minutes on each side, until golden brown and crisp.
Step 7
Drain on paper towels and serve hot.
Step 8
If desired, drizzle with a little honey, or serve with honey for dipping.
