Step 1: Combine flour, cinnamon, pepper and sugar in a zip-top plastic bag.
Step 2: Heat butter in a shallow skillet over medium heat until melted.
Step 3: Peel plantains, then slice into rounds 1/2-inch thick.
Step 4: Drop plantain slices a few at a time into the bag of flour and shake well to coat.
Step 5: Remove plantain slices from bag; shake off excess flour.
Step 6: Fry plantain slices for 4 minutes on each side, until golden brown and crisp.
Step 7: Drain on paper towels and serve hot.
Step 8: If desired, drizzle with a little honey, or serve with honey for dipping.
