  • 2 medium plantains, very ripe
  • 1/2 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon fresh-ground black pepper
  • 1 teaspoon sugar
  • 4 tablespoons butter

How to Make

  • Step 1: Combine flour, cinnamon, pepper and sugar in a zip-top plastic bag.

  • Step 2: Heat butter in a shallow skillet over medium heat until melted.

  • Step 3: Peel plantains, then slice into rounds 1/2-inch thick.

  • Step 4: Drop plantain slices a few at a time into the bag of flour and shake well to coat.

  • Step 5: Remove plantain slices from bag; shake off excess flour.

  • Step 6: Fry plantain slices for 4 minutes on each side, until golden brown and crisp.

  • Step 7: Drain on paper towels and serve hot.

  • Step 8: If desired, drizzle with a little honey, or serve with honey for dipping.
