"For roughly the last 8 mo, we've been enjoying the wonders of Costco shopping. 1 of my most recent happy finds was Krusteaz Buttermilk Pancake Mix (an add water & you're good-to-go kitchen miracle). As my profile intro says, I'm not a food snob & I favor convenience foods that save me time & inspire me when we host our family & friends. This recipe was found at the Krusteaz website & credited Liz Mays as the author. Liz is a blogger & member of the Krusteaz Baker’s Dozen team of chefs. This is the 3rd in my series of Krusteaz recipes to share w/you & I entered it as written. IMHO there's no way to improve on this exceptional recipe. It already contains everything you might expect or hope for in a breakfast casserole. So make it & expect to ENJOY the perfect all-occasion breakfast or brunch entrée. :-)"

Step by Step Method
Step 1
Preheat oven to 350F.
Step 2
Lightly coat an 11x7-in baking pan w/cooking spray. In lrg bowl, combine the pancake mix, water & maple syrup. Add & mix in the sausage & bacon. Pour half of the batter into the prepared baking pan. Layer the apple slices over the batter mixture. Sprinkle brown sugar & cinnamon over the top of apples. Carefully pour the remaining batter over the apple & cinnamon sugar layer.
Step 3
Bake 40-45 min until firm & golden brown. During the last 10 min of baking, scramble 2 eggs, break up any lrg pieces & set aside. Remove baking pan from oven. Sprinkle w/scrambled eggs, cheddar cheese & the remaining chopped bacon.
Step 4
Bake for an another 5 min or until cheese is melted. Cut into squares & serve w/warmed maple syrup drizzled over the top.
