Step by Step Method
Step 1
In a saucepan over medium heat ad the figs, water and orange juice and bring to a simmer and cook for 30 minutes or until figs are tender and liquid is almost evaporated.
Step 2
Transfer mixture to the bowl of a food processor and process to a paste and transfer to another bowl so the mixture can cool off and come to room temperature.
Step 3
Meanwhile make the dough by whisking the dry ingredients (flour - salt) in a bowl.
Step 4
In the bowl of an electric mixer add the butter and brown sugar and with the paddle attachment mix until creamy and then add the egg, vanilla and orange zest and mix on medium until combined and dough comes together (30 seconds).
Step 5
Transfer dough to work surface and form into 3 balls placed in a bowl and refrigerate for 15 minutes.
Step 6
Preheat oven to 350 degrees F.
Step 7
Place one ball of dough (at a time) on parchment paper and form a rectangle. Place another piece of parchment paper on top and flatten it out with rolling pin. Roll it out to a rectangle wihcis is about 12 x 5 inches and about 3/4 inch thick.
Step 8
Place 1/3 of the fig mixture into the center of the dough, spreading it out evenly, leaving some unfilled dough around edges.
Step 9
Bring one side of the dough over the filling using parchment paper to help fold it over. Peel dough off the paper. Repeat for other side. Cut ends of dough to make it neat and even.
Step 10
Cut the dough into squares (the original recipe said to measure to be sure they are square but we never do that). Place cookie on prepared cookie sheet, leaving some space between cookies.
Step 11
Bake for 15-20 minutes or until golden and then place them on a wire rack to cool.
