"My hubby is on a potassium restricted diet, but loves potatoes. So I made potato salad today with turnips instead. He couldn't even tell they were not potatoes."

Step 1

Put turnips in a pan of water and bring to a boil. When it starts to boil, let it cook for about 20 minutes or until fork tender. Drain and run under cold water to chill.

Step 2

In the meantime, mix the rest of the ingredients in a medium bowl and whisk together well.

Step 3

Put chilled turnips on a towel to release most of the moisture.

Step 4

Put them in a bowl and pour the sauce over the top, and stir well. Place in refrigerator for at least 6 hours to allow all the flavors to permeate the turnips. Stir again after about 3 hours.
