Ingredients

The ingredients are:
  • 1 pound turnips, peeled and chopped in 1" cubes
  • 1 cup mayo or mayo substitute (I like Spin Blend or Miracle Whip)
  • 2 tablespoons lemon juice
  • 2 tablespoons pickle juice
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon celery seed
  • 1 tablespoon curry powder
  • 1 medium yellow onion, diced
  • 1 large celery stalk, diced
  • 1 large radish, chopped to match the size of the onions and celery
  • 2 hard boiled eggs, chopped

How to Make

  • Step 1: Put turnips in a pan of water and bring to a boil. When it starts to boil, let it cook for about 20 minutes or until fork tender. Drain and run under cold water to chill.

  • Step 2: In the meantime, mix the rest of the ingredients in a medium bowl and whisk together well.

  • Step 3: Put chilled turnips on a towel to release most of the moisture.

  • Step 4: Put them in a bowl and pour the sauce over the top, and stir well. Place in refrigerator for at least 6 hours to allow all the flavors to permeate the turnips. Stir again after about 3 hours.

  • Step 5: Enjoy!
