Step by Step Method
Step 1
Rinse the rice under cold water until the water runs clear. This removes excess starch.
Step 2
In a medium saucepan, combine the rice and water. Bring to a boil over medium heat, then reduce the heat and simmer until the rice is tender and the water is absorbed, about 15-20 minutes.
Step 3
In a large saucepan, heat the milk over medium heat until it’s warm but not boiling.
Step 4
In a small bowl, dissolve the cornstarch in a little bit of milk, making a slurry.
Step 5
Add the warm milk, sugar, and cornstarch slurry to the saucepan with the cooked rice. Stir continuously until the mixture starts to thicken and comes to a gentle boil. This should take about 10-15 minutes.
Step 6
Once thickened, remove from heat and stir in the vanilla extract.
Step 7
Pour the pudding into individual serving dishes or a large bowl. Allow it to cool slightly before refrigerating.
Step 8
Chill in the refrigerator for at least 2 hours, or until fully set.
Step 9
Before serving, you can sprinkle the top with ground pistachios or almonds for added flavor and texture. A light dusting of cinnamon or cocoa powder also works well.
