How to Make

  • Step 1: Rinse the rice under cold water until the water runs clear. This removes excess starch.

  • Step 2: In a medium saucepan, combine the rice and water. Bring to a boil over medium heat, then reduce the heat and simmer until the rice is tender and the water is absorbed, about 15-20 minutes.

  • Step 3: In a large saucepan, heat the milk over medium heat until it’s warm but not boiling.

  • Step 4: In a small bowl, dissolve the cornstarch in a little bit of milk, making a slurry.

  • Step 5: Add the warm milk, sugar, and cornstarch slurry to the saucepan with the cooked rice. Stir continuously until the mixture starts to thicken and comes to a gentle boil. This should take about 10-15 minutes.

  • Step 6: Once thickened, remove from heat and stir in the vanilla extract.

  • Step 7: Pour the pudding into individual serving dishes or a large bowl. Allow it to cool slightly before refrigerating.

  • Step 8: Chill in the refrigerator for at least 2 hours, or until fully set.

  • Step 9: Before serving, you can sprinkle the top with ground pistachios or almonds for added flavor and texture. A light dusting of cinnamon or cocoa powder also works well.
