"This is such a nice salsa or relish to serve over fish, shrimp, scallops, seafood cakes, chicken, or pork. It is so versatile and so easy. Great on tacos or quesadillas as well. It is best made with fresh fruit, when in season - but, I have found that frozen fruit works pretty well. Peach and mango are my favorites; but, you can really use anything, even pineapple is a nice choice. Let it rest a good 2-4 hours before serving if possible - the flavors only get better. Cooking time includes time for the salsa to (rest before serving)"

Step by Step Method

Step 1

Salsa ... Add everything to a small bowl and lightly toss to combine. Make sure not to break up the fruit too much; but, make sure that everything is combined. The lime juice is what will prevent the fruit from browning. Cover tightly with plastic wrap or in a tupperware 'like' container for 2-4 hours for the flavors to develop. You can always serve it right away; but, it is better after is has set a while.

Step 2

Serve ... If you want, you can add the cilantro right before serving. If you aren't a fan of cilantro - try a mix of cilantro and mint; or even mint and parsley. This salsa is a perfect compliment to seafood, chicken, or pork. Also, as mentioned ... it is also fantastic on tacos or quesadillas. It is really a great condiment to many dishes. ENJOY!
