Step 1: Salsa ... Add everything to a small bowl and lightly toss to combine. Make sure not to break up the fruit too much; but, make sure that everything is combined. The lime juice is what will prevent the fruit from browning. Cover tightly with plastic wrap or in a tupperware 'like' container for 2-4 hours for the flavors to develop. You can always serve it right away; but, it is better after is has set a while.
Step 2: Serve ... If you want, you can add the cilantro right before serving. If you aren't a fan of cilantro - try a mix of cilantro and mint; or even mint and parsley. This salsa is a perfect compliment to seafood, chicken, or pork. Also, as mentioned ... it is also fantastic on tacos or quesadillas. It is really a great condiment to many dishes. ENJOY!
