"I have been making this since microwaves first came out, it's so easy and really a no-fail recipe, you may use other kinds of nuts if desired. Be prepared to NOT eat a small amount of these lol! "

Step by Step Method

Step 1

Combine sugar and corn syrup in a 3-quart heat-resistant plastic microsafe bowl; microwave on high for 5 minutes.

Step 2

Stir in peanuts; microwave on high for 2-3 minutes longer, or until peanuts and syrup are lightly browned; mix in butter, vanilla and baking soda.

Step 3

Mix until light and foamy (be careful, syrup is HOT!) pour quickly onto a buttered cookie sheet, and spread to desired thickness.

Step 4

When cool, break into pieces.

Havent had peanut brittle in ages so thought it would be a nice treat for the holidays. Since I am not very experienced making candy on the stove it was nice being able to use the microwave. I did use the salted dry roasted peanuts but I didnt have maple extract on hand so just vanilla went in. Spread the brittle on my cookie sheet on the thicker side and when cooled had to give it a try and wasnt disappointed. Making this peanut brittle couldnt be easier and it was so good it was hard to eat just one piece! Would be nice given as a gift in a pretty tin or wrapped in fancy wrap. Want to make this again with the maple and vanilla extract. Thank you Kitt for sharing it will be my go to recipe! Made and reviewed for the What's On The Menu tag game.

Delicious and addictive!!!!! I have made this with only vanilla as well as with the maple extract and vanilla. Both are excellent but the maple extract pushes it over the top. I use a glass bowl instead of plastic because I'm not comfortable with boiling sugar in plastic. None of the times changed with the glass bowl. My microwave takes 2 minutes for the second cooking. If you struggle with candy, this is for you. This recipe is so easy. The hardest part is washing the bowl.
