"One of the best no-thermometor chocolate fudge recipes, this has never failed me yet, it’s one of my favorites! Do not use a no-name chocolate chips it will lessen the flavor, I have always wanted to try this using white chocolate chips but never got around to it yet, if you try it please let me know if it works! PLEASE NOTE: using 2/3 cup of sugar will make the fudge VERY SWEET, I recommend reducing by 2 tablespoons, but no more than 2 tablespoons it needs that amount of sugar to set"

Step by Step Method

Step 1

Butter an 8 x 8-inch pan.

Step 2

In a medium saucepan combine the sugar with cream, butter and salt; bring to a boil stirring constantly (be careful the mixture does not boil over the sides of the saucepan).

Step 3

Reduce heat to medium-low (more to the low setting) and simmer gently for 5 minutes stirring frequently using a timer set to 5 minutes, no less than 5 minutes, even another minute more would be okay!.

Step 4

Remove from heat and stir in marshmallows, chocolate chips and vanilla mixing vigorously until smooth and combined (this may take a few minutes).

Step 5

Mix in nuts, then pour into pan.

Step 6

Cool to room temperature then refrigerate.

Step 7

Cut into small squares.

This is my new favorite fudge recipe! It will be the one I use from now on. It's smooth, creamy and superlious! I used a 1/3 cup whipping cream and a 1/3 cup whole milk, as one of the option’s Kitten suggested. The only change I made was the pan size. I used a 10x5 bread pan lined with non-stick foil. The bread pan makes for a nice thick piece of fudge. This fudge is going to make a lovely gift for someone on my Christmas list! Thanks for sharing this recipe, Kitten!

Kitten is right -- it will never fail. All I can say is a lady at church called this "Sin In A Lump" while she was reaching for her third piece. Rich, chocolate-y, easy, and delicious. It's been a huge hit with anyone I've ever given it to.
