"I have made these rolls for many many years. I always make plenty for the freezer so we can have a fresh tasting roll with dinner when we want one. They are a soft and light tasting roll. You may need to add a little more flour than the recipe calls for, for the kneading. It is hard to determine the EXACT amount since I work by the feel of the dough. On humid days, you may need to add more flour."

Step by Step Method

Step 1

Grease a large mixing bowl and set aside.

Step 2

In another large mixing bowl, add the yeast, salt, sugar, oil, and hot water. Mix ingredients together for 2 minutes on medium speed.

Step 3

Add 2 cups of flour and the powdered milk and mix for another 2 minutes.

Step 4

With a wooden spoon, stir in 3 cups of bread flour; mix well.

Step 5

Remove the dough from the bowl put out onto a lightly floured counter top or table.

Step 6

Knead the dough for 10 minutes until smooth and elastic. You may need to sprinkle a little flour on your dough or counter top a couple of times as you knead until it doesn’t stick to your surface any more.

Step 7

Place the dough into the greased bowl and then flip the dough over so greased side is up. Cover with a piece of plastic wrap; don’t tighten it down, just lay it over the bowl loosely. The plastic keeps the dough from drying out too much.

Step 8

Let the dough rise until double in a warm place It can be a sunny window or on a warm clothes dryer that is running.

Step 9

Lightly grease 2 cookie sheets with shortening.

Step 10

After the dough has risen, pull about 20-22 pieces of dough off the dough and shape them into balls by tucking the ends under; pinching it all towards the center on the underside of the roll.

Step 11

Place shaped rolls onto the greased cookie sheets about 2 inches apart. Cover with a towel and let rise in a warm place until double; about 30-45 minutes.

Step 12

Preheat oven to 325 degrees.

Step 13

Bake one cookie sheet of rolls at a time. Bake for 25-30 minutes. They should be golden brown on top.

Step 14

Remove from oven and take a wet paper towel and wipe off the tops of the baked rolls while they are still hot.(It keeps the bread crust soft. But, you can skip this step if you want).

Step 15

Enjoy them warm with a tad of butter on them.

Step 16

To freeze, cool the rolls completely and store in a airtight container or freezer bags in the freezer. For one roll, microwave the frozen roll for about 30 seconds.
