"The original name of these Pumpkin Muffins was Country Pumpkin Muffins by Kim Scott from another food site. I changed the recipe per the reviewers and loved it so much that I am posting them here. These are not a real spicy muffin and that is why I like them. I could eat these all year long and my kids love them too. My son now gets one for snack everyday for school. I freeze the extra and take them out 1 to 4 at a time. I use cupcake tins and mini cupcake tins. Enjoy."

Step by Step Method

Step 1

Preheat oven to 400 degrees and spray pans. In a large mixing bowl, beat sugar, oil, eggs, pumpkin and water.

Step 2

In another bowl combine flour, baking powder, soda, spices and salt.

Step 3

Add dry ingredients to pumpkin mixture; blend well. Fold in craisins. (not raisins they are to sweet).

Step 4

Spoon into greased tins, filling 3/4 full. Bake at 400 degrees Fahrenheit for 15-20 minutes or until toothpick inserted in the middle comes out clean.

I know, I know ~ Muffins like these are especially nice over the winter holidays, but I'm one of those who thoroughly enjoys such things any ol' time of the year! The 2 of us really enjoyed the combo of pumpkin & cranberries in these tasty treats! Wonderfully tasty! Thanks for posting the recipe!
