Step by Step Method

Step 1

Boil grits with water until thick at end add garlic and cheese.

Step 2

Meanwhile in skillet, cook bacon. Remove.

Step 3

Add butter to skillet, fry eggs over easy.

Step 4

Flop 1/4 of grits on plate crumble bacon. Top with eggs.

Oh, this was soooo goood! Had this for brunch today and am wishing for leftovers, but none to be had because I cut the recipe in half. For the grits, I followed my own proportions, as it's how I usually make it for the two of us (2/3 cup quick grits, 1 2/3 cups water). I ended up using a full cup of grated cheddar for two servings to get it to the flavor we wanted. The garlic adds a whole new dimension to these grits, and I will add it from now on whenever I make cheese grits! Oh, and I also added a good sprinkle of Tony Cachere's Cajun seasoning, instead of salt. Thanks for sharing this recipe - it's one that will be in our regular weekend breakfast rotation!

Oh yeah! Loved this and so did my DH. I made half of the recipe for the two of us - except I did not cut down the bacon - lol! I added some "Slap Yo Mama" seasoning, too, for some extra heat. (Made this for a second time - wonderful comfort food!)
