"I first posted this recipe to another site back in 2010,and decided to post it here also.And one of the best things about this recipe,it uses leftovers( Which should be no surprise to any of you who know me ;)). I had some leftover Fried Chicken and didn't want the same meal twice, so I came up with this.Any boneless skinless Fried Chicken with crust will work in this recipe.The taste of this dish, will depend on the type of seasoning on your chicken breast.If you like, add salt and pepper to taste.Prep time does not include cooking pasta. Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Mix together cracker crumbs and butter,spread half into a 11 x 7 inch pan which has been prepared with cooking spray.

Step 3

In a large bowl combine remaining buttered cracker crumbs,soup,sour cream,and diced chicken mixing well.

Step 4

Sprinkle top with onions and bake for 25 minute or until mixture is bubbly and onions are lightly browned.

For the small amount of ingredients and ease this turned out really tasty. As like ellie, I added in some frozen peas and added in some some celery for a bit of crunch. Chef thank you very much this great easy recipe!

We enjoyed this casserole a lot. We did skip the french-fried onions and used cream of celery soup (I could have sworn I bought cream of chicken but when I got home it was cream of celery), whole grain crackers and less chicken than specified - ours was grilled chicken instead of the fried chicken. We also added a pkg of frozen peas to the mix. Very good and a great way to use up leftover chicken. Thanks for sharing!

I used whole grain penne, unsalted butter for the Ritz crumbs, rotisserie chicken and golden mushroom soup. We really enjoyed this dish and will be making it again. I will be adding a wee bit of heat next time. It is fast and easy to put together and one that I think my visiting family will enjoy! Thank you for sharing Shapes! Made for Billboard Recipe Tag.
