"Do you want a sure-fire way to get your kids excited about going to the breakfast table to eat their oatmeal? This recipe may be your answer. I follow a few blogs & occ share what captures my attention. Blogsters also share w/each other. For example, “Fruit Salsa & Cinnamon Chips” is a recipe shared by Jen Nikolaus of the “Yummy Healthy Easy” blog w/the “I Heart Naptime” blog by Jamielyn that I follow. The fruit salsa seemed routine to me & the seasons here in Iceland are so variable that I doubted it would be useful for me, BUT the cinnamon chips work all yr-round as dippers for sweet treats, kid snacks & to add crunch & sweetness to oatmeal. All that said, I wanted to share the idea w/you. I entered the prep steps as given. BUT IMO they're more complex than needed. So please read “NOTE – My Method” at the end of the prep directions. Step by Step Method

Step 1

Preheat oven to 350F. Cover a large baking sheet w/parchment paper.

Step 2

On a large plate, combine the sugar & cinnamon. Spray each tortilla (front & back) & carefully lay on the plate, one at a time. Move around lightly to get the cinnamon & sugar to adhere to the tortilla, then flip to coat the other side.

Step 3

W/a pizza cutter, cut cinnamon & sugar tortilla in half & then each half into 4 pieces, creating 8 slices per tortilla. Spread out on the baking sheet.

Step 4

Repeat w/all tortillas & then place in the oven for 8-10 min. Pull baking sheet from oven & set aside to cool.

Step 5

NOTE: My Method – I’d start by cutting the tortillas, spray the cut pieces on parchment paper, dust both sides on the parchment paper w/the sugar & cinnamon mixture using a powdered sugar shaker, fine mesh shaker or even a fine mesh tea-strainer & finally transfer them to a parchment-lined baking sheet, etc = Less handling of the chips & no dredging.

I really enjoyed this tasty snack. I made just one tortilla, cut into 8 slices. I used a pizza cutter to cut a flour wheat tortilla on the counter, then laid them on the parchment and sprayed with coconut oil cooking spray. Then I dredged them in my cinnamon sugar, sprayed the other side will in the cinnamon sugar bowl, then flipped them over. Baking time was spot on and in just a few minutes I gobbled them up. I will be making this again!

Smells Like Salad

I used regular oil and tossed together in a mixing bowl the cut up tortillas triangles with powdered sugar and ground cinnamon. After removing from the oven to drain on paper towels the triangles were transferred to a serving bowl and lightly dusted with raw sugar. Enjoyed for Elevenses today! Made for First Time Tag.
