Step 1: Preheat oven to 350F. Cover a large baking sheet w/parchment paper.
Step 2: On a large plate, combine the sugar & cinnamon. Spray each tortilla (front & back) & carefully lay on the plate, one at a time. Move around lightly to get the cinnamon & sugar to adhere to the tortilla, then flip to coat the other side.
Step 3: W/a pizza cutter, cut cinnamon & sugar tortilla in half & then each half into 4 pieces, creating 8 slices per tortilla. Spread out on the baking sheet.
Step 4: Repeat w/all tortillas & then place in the oven for 8-10 min. Pull baking sheet from oven & set aside to cool.
Step 5: NOTE: My Method – I’d start by cutting the tortillas, spray the cut pieces on parchment paper, dust both sides on the parchment paper w/the sugar & cinnamon mixture using a powdered sugar shaker, fine mesh shaker or even a fine mesh tea-strainer & finally transfer them to a parchment-lined baking sheet, etc = Less handling of the chips & no dredging.
