Step by Step Method
Step 1
Melt the butter in a large soup pot. Add onions, carrots, and celery and saute over medium heat until tender. Add garlic and Italian seasoning, and cook 1 or 2 additional minutes.
Step 2
Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.
Step 3
Whisk the flour with water, add to the simmering soup, stir constantly until until soup is slightly thickened.
Step 4
Add milk and broccoli and cook until broccoli is just tender and soup is heated through.
Step 5
Stir in cheese, allow to melt. Add in some salt and pepper using as much as you want.
Step 6
Serve.
