Ingredients

The ingredients are:
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 carrot, finely chopped
  • 1 stalk celery finely chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 2 large russet potatoes, peeled and chopped
  • 1 1/2 tablespoons all-purpose flour
  • 1/2 cup water
  • 2/3 cup whole milk (or half and half)
  • 2 cups broccoli, chopped
  • 2 cups cheddar cheese, shredded
  • Salt & pepper

How to Make

  • Step 1: Melt the butter in a large soup pot. Add onions, carrots, and celery and saute over medium heat until tender. Add garlic and Italian seasoning, and cook 1 or 2 additional minutes.

  • Step 2: Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.

  • Step 3: Whisk the flour with water, add to the simmering soup, stir constantly until until soup is slightly thickened.

  • Step 4: Add milk and broccoli and cook until broccoli is just tender and soup is heated through.

  • Step 5: Stir in cheese, allow to melt. Add in some salt and pepper using as much as you want.

  • Step 6: Serve.
