Step by Step Method
Step 1
Heat oil over medium heat in a stock pan.
Step 2
Add sausage, brown well.
Step 3
Add tomato paste and cook for 5 minutes until brown.
Step 4
Add onions through oregano.
Step 5
Cook until garlic is aromatic, about 5 minutes.
Step 6
Pour into a Pam sprayed 4 quart slow cooker.
Step 7
Add tomatoes and chicken stock.
Step 8
Cook on low setting for 6 hours or till vegetables are tender.
Step 9
Stir in beans, zucchini, spinach, and pasta.
Step 10
Cook on high setting for 8 minutes or until beans and pasta are warmed thru and spinach has wilted.
Step 11
Season to taste.
Step 12
Serve with garnish to taste.
