Step 1: Heat oil over medium heat in a stock pan.
Step 2: Add sausage, brown well.
Step 3: Add tomato paste and cook for 5 minutes until brown.
Step 4: Add onions through oregano.
Step 5: Cook until garlic is aromatic, about 5 minutes.
Step 6: Pour into a Pam sprayed 4 quart slow cooker.
Step 7: Add tomatoes and chicken stock.
Step 8: Cook on low setting for 6 hours or till vegetables are tender.
Step 9: Stir in beans, zucchini, spinach, and pasta.
Step 10: Cook on high setting for 8 minutes or until beans and pasta are warmed thru and spinach has wilted.
Step 11: Season to taste.
Step 12: Serve with garnish to taste.
