Step by Step Method

Step 1

Make the spicy onions: Squeeze the lime into a bowl and add the onion or shallot, jalapeño, salt and sugar to the juice. Set aside while you make the black beans.

Step 2

Prepare the beans: Heat a large skillet, then add 2 tablespoons oil. When oil is hot, add the onion and bell pepper and sauté until soft and golden, about 10 minutes. If the pan looks dry, drizzle in a little more oil.

Step 3

Add the garlic and jalapeño and sauté until fragrant, 1 minute. Stir in tomato paste, chili powder, oregano and cumin, and sauté until fragrant. Add the beans and a few large pinches of salt and let simmer until the flavors meld, about 15 minutes.

Step 4

Taste and add more salt, chili powder and oregano to taste. Serve beans with tortillas and avocado and top with the pickled onions and jalapeño and some of their liquid, adding any of the garnishes you like.

Yummers! We loved this bean tacos very much, indeed. It was such a nice change of pace from the regular ole tacos and my husband kept on thanking me. He was first not too intrigued on bean tacos, but the flavor itself, convinced him otherwise. I did up the seasonings until it was just right for us, otherwise followed as written. The pickled onions are so good on these and sure does up it up! Thanks so much, Marra, for sharing. Made it for FYC.

Wowzers, were these ever good! These are going to be on our regular rotation, especially on our Meatless Mondays, or when vegetarian friends come to visit. DH admitted he was more than a little skeptical when he saw what these were (meatless!!!), but after a few bites he kept saying how fantastic these were and how he didn't miss the meat at all! Great combo of flavors, and we fully loaded our tacos with guacamole, the absolutely DELICIOUS pickled onions, radishes, crema, salsa, and a slice of perfectly ripe avocado. Thanks for making a believer out of the hubby! These are going into my Best of 2021 file.

These are so tasty...we really enjoyed the spicy onion...the hubby didn't even notice there weren't any meat in the taco's...I served them on flour street tortillas...my avocado turned bad so it was omitted...served them with mexi tater tots...made for "Only the Lonely" tag game...
