"A KC favorite! Don't let the list of ingredients fool you this is easy to make but it does require a few hours of simmering time, if your not a fan of spicy you can omit the jalapeno. For best flavor make certain to brown the beef well, this may ntake about 12 minutes. This is very good!"

Step by Step Method

Step 1

In a Dutch oven or pot cook the ground beef with onion until no longer pink. Drain fat. Continue cooking until the beef is browned (about 12 minutes). Add in the garlic, thyme and jalapenos; cook stirring about 3-3 minutes.

Step 2

Add in all remaining ingredients except the diced carrots; bring to a boil stirring. Reduce heat to low and simmer partially covered for 30 minutes. After 30 minutes of cooking add in the diced carrots then season with more salt and pepper. Continue cooking for another 1 1/2 hours or until barley is cooked.
