"I have had this recipe tucked away for more years than I care to remember. It uses french beans, but fresh green beans work just as well. Toasted sesame seeds also work well to finish off this dish."
Top and tail the beans, rinse and cook in salted boiling water for approx; 10 minutes.
Remove the beans from the water and immediately rinse under very cold running water.
Heat the oil in a large shallow pan and add the lightly crushed garlic; cook garlic over a medium heat until golden. Remove the garlic from the oil and discard the garlic only (not the oil). Place the beans in the pan , lower the heat and gently cook.
Meanwhile, in a small bowl, beat the butter with the cornflour, soy, vinegar and sugar. Pour the mix over the beans, add the hot stock and heat gently for a few minutes.
Transfer to a heated serving dish, season to desired taste, sprinkle with the parsley and serve.
