Ingredients

The ingredients are:
  • 1 kilo green beans (fresh 2 pounds)
  • Salt and pepper, to taste
  • 2 tablespoons oil
  • 15 gram garlic clove, lightly crushed (1 clove)
  • 50 grams butter (2 ounces)
  • 1/2 teaspoon cornflour (cornstarch)
  • 2 teaspoons soy sauce
  • 1 tablespoon vinegar (white wine)
  • 1/4 teaspoon sugar
  • 3 tablespoons chicken stock ( or vegetable)
  • 1 tablespoon parsley, chopped

How to Make

  • Step 1: Top and tail the beans, rinse and cook in salted boiling water for approx; 10 minutes.

  • Step 2: Remove the beans from the water and immediately rinse under very cold running water.

  • Step 3: Heat the oil in a large shallow pan and add the lightly crushed garlic; cook garlic over a medium heat until golden. Remove the garlic from the oil and discard the garlic only (not the oil). Place the beans in the pan , lower the heat and gently cook.

  • Step 4: Meanwhile, in a small bowl, beat the butter with the cornflour, soy, vinegar and sugar. Pour the mix over the beans, add the hot stock and heat gently for a few minutes.

  • Step 5: Transfer to a heated serving dish, season to desired taste, sprinkle with the parsley and serve.
