Step 1: Top and tail the beans, rinse and cook in salted boiling water for approx; 10 minutes.
Step 2: Remove the beans from the water and immediately rinse under very cold running water.
Step 3: Heat the oil in a large shallow pan and add the lightly crushed garlic; cook garlic over a medium heat until golden. Remove the garlic from the oil and discard the garlic only (not the oil). Place the beans in the pan , lower the heat and gently cook.
Step 4: Meanwhile, in a small bowl, beat the butter with the cornflour, soy, vinegar and sugar. Pour the mix over the beans, add the hot stock and heat gently for a few minutes.
Step 5: Transfer to a heated serving dish, season to desired taste, sprinkle with the parsley and serve.
