"This really isn't much of a recipe, but just had to share! Enjoyed this for lunch at the Oracle Inn just north of Tucson. A neat old place with lots of antinques and great food. You can make your own BBQ (chicken, beef or pork), but I cheated and bought a tray of Jack Daniel's Pulled Pork. Had never tried it before, but definitely hooked the bbq sauce!"

Step by Step Method

Step 1

Preheat oven to 375 degrees F. Pierce the potatoes and place onoven rack (do not wrap in foil, as you want the crispy skin) and bake until done, about 60 minutes, depending on the size of the potaotes. Once done, place potatoes in kitchen towel and gently roll the potatoes; place on plate and cut a slit a gently squeeze each end to open.

Step 2

Heat barbecued meat (chicken, pork or beef) in microwave or on stove top. Pile barbecued meat on the potatoe, top with cheese and sprinkle green onions on top. Pass the extra barbecue sauce and sour cream.
