Ingredients

The ingredients are:
  • 1 1/2 pounds potatoes (4 russet, scrubbed)
  • 3 cups chopped pork (barbecued, or chicken or beef)
  • 1 cup cheddar cheese, shredded
  • Garnish
  • 1/2 cup green onions, sliced
  • 1 cup barbecue sauce (I LOVE Jack Daniels BBQ Sauce)
  • 8 ounces sour cream

How to Make

  • Step 1: Preheat oven to 375 degrees F. Pierce the potatoes and place onoven rack (do not wrap in foil, as you want the crispy skin) and bake until done, about 60 minutes, depending on the size of the potaotes. Once done, place potatoes in kitchen towel and gently roll the potatoes; place on plate and cut a slit a gently squeeze each end to open.

  • Step 2: Heat barbecued meat (chicken, pork or beef) in microwave or on stove top. Pile barbecued meat on the potatoe, top with cheese and sprinkle green onions on top. Pass the extra barbecue sauce and sour cream.
