Step by Step Method

Step 1

Heat about 1 tablespoon sesame oil in a large sauce pan on medium/high heat.

Step 2

In a large bowl, mix together ground chicken, onions and chopped mushrooms; Set aside.

Step 3

Prepare initial marinade sauce by mixing together: 2 tablespoon hoisin sauce, 2 tablespoon soy sauce, 2 tablespoon teriyaki sauce, 1 tablespoon chopped garlic, and 1 teaspoon powdered ginger. Pour marinade on top of ground chicken and mix gently with your clean hands until everything is thoroughly combined.

Step 4

Once oil is heated, pour chicken mixture onto pan and sauté for about 10-12 minutes, (stirring constantly) or until chicken is almost cooked. Season with pepper.

While the chicken is cooking PREPARE THE SAUCE


Step 5

Whisk together 1/4 cup hoisin sauce, 1/4 cup teriyaki sauce, 3/4 teaspoon ginger powder, and 2 teaspoon cornstarch and hot sauce.

Step 6

Pour sauce over chicken mixture and let simmer for a few more minutes.

FOR SERVING


Step 7

Arrange 1-2 lettuce leaves on a plate. Spoon some rice over the lettuce, then place turkey mixture over the top. Sprinkle tops with green onions. Serve.

Instead of brown rice I use cauliflower rice and it's delicious that way!
